Beetroot thinnings

There is never enough beetroot in the world! This year I have three long rows which were planted at different times and the first row is ready for thinning now. A beetroot seed grows 3 little plants out of one seed (same as silverbeet, they are related). As they grow bigger they become squashed together and eventually you need to pull some out to leave one behind which can grow to full size without any competition. So you end up with a bunch of baby beetroot about ping pong ball size.  These little beauties are so young and tender that you don’t need to do anything complicated to them. Just a simple beetroot salad: cook them until tender, slip off the skins, cut into halves or quarters and put to cool in a well seasoned bath of olive oil and balsamic vinegar.
