In this simple dish the the fresh beans are bathed in olive oil that has been sweetened with melted red onions and garlic.

Slice a red onion thinly and cook slowly in olive oil until soft and translucent, with a couple of squashed garlic cloves. Meanwhile pick and prepare your beans. Top and tail them and break into pieces then cook in a pot of boiling, salted water to your liking. I love fresh green beans when they are soft and tender, but was once told off by a visiting Filipino for overcooking them and that they must squeak when bitten into. So each to their own. When they are cooked drain and stir them through the flavoured oil, scatter with fresh herbs. and serve warm or at room temperature.
