Cauliflower and White Bean Fritters with Green Herb Mayo

Makes 12 large fritters

Ingredients
  • 1 cup flour
  • 1 tsp baking powder
  • salt and pepper
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cauliflower, broken up into small florets and lightly steamed (about 2 cups)
  • 400g tin cannellini beans drained or 180 g dried cannellini beans soaked overnight and boiled until tender
  • 100 g feta cheese crumbled
  • handful of fresh soft herbs chopped finely
  • oil for frying
  • 1 measure fresh herb salsa
  • 1 measure food processor mayonnaise
Method
  • Make a batter by mixing the first five ingredients together until smooth
  • Gently stir the cauliflower, beans, herbs and feta through the batter
  • Cook in batches in hot oil in a frying pan
  • Mix the herb salsa and the mayonnaise together and serve with the fritters
