Makes 12 large fritters
Ingredients
- 1 cup flour
- 1 tsp baking powder
- salt and pepper
- 2 eggs
- 1/2 cup milk
- 1/2 cauliflower, broken up into small florets and lightly steamed (about 2 cups)
- 400g tin cannellini beans drained or 180 g dried cannellini beans soaked overnight and boiled until tender
- 100 g feta cheese crumbled
- handful of fresh soft herbs chopped finely
- oil for frying
- 1 measure fresh herb salsa
- 1 measure food processor mayonnaise
Method
- Make a batter by mixing the first five ingredients together until smooth
- Gently stir the cauliflower, beans, herbs and feta through the batter
- Cook in batches in hot oil in a frying pan
- Mix the herb salsa and the mayonnaise together and serve with the fritters
