Cauliflower Mousse

ingredients
  • 1 cauliflower cut into small florets
  • 1 onion chopped
  • 3 slices bread
  • 250 g grated cheese
  • 1 cup milk
  • 3 eggs, separated
method
  1. Bring the cauliflower to the boil in a large pot, then drain
  2. Saute the onion
  3. Soak the bread in the milk, beat in the egg yolks
  4. Mix together the cauliflower, onion, milk/crumb/yolk mixture.
  5. Beat the egg whites till stiff then fold through.
  6. Place in an oven proof baking disk and cook until set and browned on top, about an hour
