Corn fritters

Ingredients

  • 1/2 cup flour
  • 1/2 tsp baking soda
  • 1 egg
  • 1/4 cup milk
  • Salt and pepper
  • 1 or 2 corn cobs, scraped to make 2 cups corn kernels.

Put the dry ingredients into a bowl and make a well in the centre to put the egg and milk into. Starting in the middle, whisk the flour into the egg and milk until you have a smooth batter. Stir the corn into the batter and fry in spoonfuls in hot oil.

Serve with sour cream, avocado slices and a spicy tomato salsa
