A stylish and tasty selection of snacks for when you’re missing your favourite Japanese street food during lockdown

If you make the sushi, pickles and dipping sauces in the morning, all you have to do later on are the kumara pancakes and tempura veg.

Clockwise from top left: Salmon sushi, wasabi, pickled ginger (out of a packet), cucumber and avo sushi. I’m not so good at making sushi, mine fall apart when you pick them up, so I’m not going to try to tell anyone how to do it. This is what I do know: cook 1/2 cup sushi rice for each sheet of nori (the amount in the picture used 2 sheets of nori and 1 cup rice), mix though 1 tbsp rice wine vinegar and 1 tsp sugar and let cool. Assemble some fillings and follow the instructions on the packet of nori. It helps to have something to roll them up in. Good luck!

Tempura dipping sauce

Okonomyaki dipping sauce: a weird mix of tomato sauce, worcester sauce and soy sauce. It works!
