(Kumara pancakes in the Osaka street food style)

INGREDIENTS
300 gm grated kumara
½ an onion very finely chopped
3cm piece of ginger, finely grated
1 large clove garlic finely chopped
Bunch Chinese greens or 1/2 cabbage finely sliced
4 Tbsp flour
2 eggs
1tbsp soy sauce
mayonnaise
Okonomiyaki Sauce
3 Tbsp tomato sauce
1 Tbsp Worcester sauce
Soy sauce to taste
METHOD
- Place kumara, onion, ginger, garlic and cabbage in a bowl and mix well with your hands
- Sprinkle the flour over and mix some more to distribute it throughout.
- Add the eggs and soy and mix through.
- Form into small or large fritters and cook in oil in a frying pan.
- Serve the pancakes crisscrossed with mayonnaise. Mix the sauce ingredients together and serve with the pancakes.
