Okonomyaki

(Kumara pancakes in the Osaka street food style)

INGREDIENTS

300 gm grated kumara

½ an onion very finely chopped

3cm piece of ginger, finely grated

1 large clove garlic finely chopped

Bunch Chinese greens or 1/2 cabbage finely sliced

4 Tbsp flour

2 eggs

1tbsp soy sauce

mayonnaise

Okonomiyaki Sauce

3 Tbsp tomato sauce

1 Tbsp Worcester sauce

Soy sauce to taste

METHOD

  1. Place kumara, onion, ginger, garlic and cabbage in a bowl and mix well with your hands
  2. Sprinkle the flour over and mix some more to distribute it throughout.
  3. Add the eggs and soy and mix through.
  4. Form into small or large fritters and cook in oil in a frying pan.
  5. Serve the pancakes crisscrossed with mayonnaise. Mix the sauce ingredients together and serve with the pancakes.
