Fermented tomato salsa

This will keep in the frig for a month or two and provides a welcome burst of fresh summer flavours as the weather turns colder.

Ingredients

  • 2 cups tomatoes chopped into a fine dice
  • 1 red onion, chopped into a fine dice
  • 2 green capsicum, chopped into a fine dice
  • 3 or 4 fresh jalapeños, chopped finely
  • 4 cloves garlic, chopped finely
  • Large handful coriander, chopped
  • Lemon or lime juice to taste
  • Salt to taste

Method

  1. Mix all the ingredients together and place into a clean glass jar that has been sterilised for 20 minutes in a 120 C oven.
  2. Cover loosely and leave at room temperature. After a day alot of moisture will have been drawn out of the vegetables and they will be covered. After another couple of days the veg will start to float to the top of the liquid and the juice will have acquired the distinctive lactic acid sour taste
  3. Place in the fridge and enjoy
